The vineyard is divided into two plots, around the Bastide de Fave in one hand, and over the Chapel of the Priory Notre-Dame in the other hand.
The vineyard around the Bastide de Fave
3 hectares of Shiraz, Vermentino and Cinsault established around the Bastide de Fave on facing east hillsides. This site, protected by a circus of hills of 360 meters in height, offers argilo-calcareous grounds stemming from a basement of limestones with dolomites. Ideally exposed and shielded from the prevailing wind, the mistral, these plots of land know a relatively late maturation, allowing to reach an optimum of phenolic maturity for red wines, and to keep a beautiful freshness for white wines.
The vineyard of Notre-Dame
5 hectares of Shiraz, Grenache and Cinsault established over the Chapel of the Priory Notre-Dame, near the village of Brue-Auriac, on facing north-west hillsides of 300 meters in height. The plots of land are implanted on a basement of lakeside limestones with yellow travertines which enables a perfect drainage of the plots of land. These plots of land, more early-ripening than those of the Bastide, allow to reach quickly an optimal aromatic maturity for the elaboration of rosé wines of the domain.
We cultivate excellence in every stage of the elaboration of our wines, with the will to permanently improve our practices and the quality of our wines:
• Sustainable grape-growing practices, by adapting our practices to protect the quality of our terroirs, and by promoting environment-friendly techniques (grassing, surface tillage,…). The pursuit of this approach has to lead us, in a near future, to the conversion of the domain in Organic farming.
• Adaptation of wine making practices to the oenological potential of the harvested grapes, by using the best available techniques so that our wines express in an authentic way the quality of our terroirs (cold stalling, temperature control of fermentations, maturation on fine lies, …).
